The stages
First phase
Spring
Tiny flower buds, called "mignole," grow on the olive trees, which will eventually blossom.
During the blooming period, small white flowers appear.
Second phase
Summer
After pollination, small green olives begin to form.
During the hot months, the olives grow and start accumulating oil inside them.
Third phase
Autumn
The olives change color from green to purple (known as "invaiatura").
From this moment, the olives can be harvested to produce Garda DOP oil.
